This time I happened to have a package of pork ribs that each had a lot of meat on them. But this would also work well with pork chops or other similar cuts, and probably with beef too. The key is using 4 large red onions -- they really have the whole dish the best flavor.

A New Recipe
Last night for dinner I threw together a few things from our freezer & fridge that we needed to use up, and the meal turned out to be really quite good. Sometimes when I make up recipes they turn out good and sometimes they're just mediocre, but we all really liked this dinner. So I thought I'd write it down so I could remember it for later. {And since I feel like I'm no pro in the cooking department, I've got to celebrate when I have little successes}. :)
