Really Good Butternut Squash Soup


Just wanted to share the recipe for our dinner from tonight.  It was so good!  Wash several butternut squashes and cut into pieces about 2 or 3 inches -- don't need to peel the squash.  Peel a bunch of carrots and cut each carrot into about three pieces.  Quarter several onions.  Cut the end off of one or two bunches of garlic. Put all the vegetables on cookie sheets and drizzle olive oil over them, then put salt and pepper on them too.  Cook them at 450 degrees in the convection oven for 40 to 60 minutes, or until vegetables are soft and starting to get a little browned on the edges.  Then add the squash, carrots, and onions to a vitamix blender (you don't need to peel the squash because the vitamix blends up the hard butternut squash peel right into the soup).  [I assume that a normal blender would work fine too, you would just have to take the time to peel the squash before cooking it.]  When the garlic has been roasted with olive oil on it, you should be able to just squeeze the whole thing and the garlic will pop right out into the blender.  Add some fat free half and half to the blender.  Blend until smooth.  This soup is so good!  And it's amazingly filling for something made entirely out of vegetables.  One large bowl of soup would be enough for an entire meal.  (Even my husband, who thinks a meal is not complete without meat, said that his bowl of soup filled him up).  We had a large group at the house so we cooked 3 cookie sheets full of vegetables, and then made up a few batches of soup in the blender.  It was great.  My mom said she has also done a pepper and tomato soup the same way and it turned out excellent too.
