I was helping with a baby shower this week and I wanted to make a dessert that not only tasted really good but also looked cute. I found this recipe online. It was very simple, the thing that took the longest was cutting the strawberries and filling them. We ended up just using spoons to fill the strawberries instead of squeezing the cream cheese mixture out of a bag (we found that since we did it this way there was a lot of extra cream cheese mixture left over). Anyway, they turned out cute and very yummy. Everyone thought they tasted really good.
1 lb large strawberries
8 oz cream cheese, softened
About 6 Tbsp powdered sugar
1 tsp vanilla extract
Graham crackers, finely crumbled
Rinse strawberries, cut the top and clean out with a paring knife if needed. Beat cream cheese, powdered sugar, and vanilla until creamy. Put mixture in a ziplock bag with the corner cut off, and fill strawberries. Once filled, dip the top in graham cracker crumbs.
Optional: slice bottoms if you want them to stand upright. Stuffed strawberries taste better after being refrigerated a day or two. You could also drizzle or dip in chocolate.
